BANOFFEE PIE (IRISH)

BANOFFEE PIE ...a great Irish recipe to try....a nice one !
INGREDIENTS
  • 12 ounces uncooked shortcrust pastry
  • 1.5 tins condensed milk (13.5 ounces each)
  • 1.5 pounds firm bananas
  • 375 ml of double cream
  • 1/2 teaspoon powdered instant coffee
  • 1 dessertspoon castor sugar
  • a little freshly ground coffee

INSTRUCTIONS
Preheat the oven to gas mark 5 (400F). Lightly grease a 10in x 1.5in flan tin. Line this with the pastry thinly rolled out. Prick the base all over with a fork and bake blind until crisp. Allow to cool.
The secret of this delicious pudding lies in the condensed milk.
Immerse the cans unopened in a deep pan of boiling water. Cover and boil for 5 hours making sure that the pan does not boil dry* (see CAUTION).
Remove the tin from the water and allow to cool completely before opening. Inside you will find the soft toffee filling (or use dulce de leche)

Method: Whip the cream with the instant coffee and sugar until thick and smooth. Now spread the toffee over the base of the flan. Peel and halve the bananas lengthwise and lay them on the toffee. Finally spoon or pipe on the cream and lightly sprinkle over the freshly ground coffee.

*CAUTION: It is absolutely vital to top up the pan of boiling water frequently during the cooking of the cans. 5 hours is a long time and if they are allowed to boil dry the cans will explode causing a grave risk to life, limb and kitchen ceilings. COUNTY CORK IRISH STEW ...a nice Irish recipe...try it !

INGREDIENTS
  • 8 small lamb chops
  • 1 tablespoon olive oil, butter, or lard
  • 1 tablespoon fresh Parsley, chopped
  • 1 bay leaf
  • 1/4 teaspoon each whole peppercorns, rosemary, thyme
  • 3 to 4 medium potatoes
  • 2 cups cabbage, shredded
  • 1 medium onion, chopped
  • 1 large leek white, thinly sliced
  • 10 small white onions
  • 1-1/2 cups celery stalks, diced
  • 1-1/2 cup peas
  • Salt and pepper to taste

INSTRUCTIONS
Season lamb with salt and pepper. In large saucepan, layer the chops side by side.
Turn once to brown both sides. Spoon off any melted fat and add enough water to cover chops. Bring to a boil and add parsley, bay leaf, peppercorns, thyme and rosemary tied up in a cheesecloth for easy removal, or simply add to stew.
Reduce heat and simmer on low heat. Peel potatoes and shape into bite sized rounds. Add potatoes, cabbage, onion, leek, white onions and celery to stew.
Simmer 20 minutes and add peas. Add a little more water if required during cooking.
Simmer an additional 10 minutes or until potatoes are fork tender. Correct seasoning.
Garnish with fresh parsley and the Irish recipe is ready to serve...Enjoy it !

IRISH BOILED DINNER

IRISH BOILED DINNER ..a nice Irish recipe to try !

INGREDIENTS
  • 1 (3 1/2 lb.) fresh beef brisket
  • 2 (12 oz.) bottles Lager beer
  • 2 c. water (or enough to just cover)
  • 2 bay leaves
  • 10 black peppercorns
  • 1/2 c. chopped parsley
  • 2 tsp. salt
  • 2 tbsp. butter or olive oil
  • 3 cloves garlic, peeled and sliced
  • 2 c. chopped and rinsed leeks (white parts only)
  • 1 med. yellow onion, peeled and sliced
  • 3/4 lb. lg. carrots, cut into lg. pieces
  • 3/4 lb. sm. red potatoes
  • 1 lb. turnips, peeled and quartered
  • 2 lbs. green cabbage, cut in sixths (secure with toothpicks)
  • Salt and freshly ground black pepper to taste

INSTRUCTIONS
Place an 8 to 10 quart dutch oven on the burner and add the beef, beer, water, bay leaves, peppercorns, parsley, and salt. Heat a frying pan and saute the garlic, leeks, and yellow onion for a few minutes then add to the dutch oven.
Cover and simmer gently for 3 1/2 hours or until the meat is very tender. (This will normally take about 1 hour per pound of brisket.)
In the last 25 minutes of cooking, add the carrots and red potatoes.
In the last 15 minutes of cooking, add the turnips, cabbage, salt, and pepper. If the vegetables are not done to your liking, cook them longer but do not overcook. Remove the toothpicks from the cabbage before serving. The Irish recipe is ready to serve..enjoy !

BAILEY'S IRISH CREAM BREAD RECIPE

INGREDIENTS
  • 1 1/4 cup very warm water
  • 1 pkg yeast
  • 1 cup Quaker oats
  • 3 cup bread flour
  • 1 tsp salt
  • 1/3 cup honey
  • 2 tbs Bailey's Irish Cream

INSTRUCTIONS
Put all ingredients into bread machine or follow your user's manual. Select correct bread cycle and crust color, then press start. The Irish recipe is ready to serve....enjoy it !

IRISH CREAM ICED CAPPUCCINO WITH EQUAL

INGREDIENTS
43% calorie reduction from traditional recipe.

  • 1/2 cup cocoa
  • 1/2 cup instant coffee granules
  • 1 cup water
  • 12 packets Equal® sweetener or
  • 3 1/2 teaspoons Equal® for Recipes or
  • 1/2 cup Equal Spoonful™
  • 6 cups fat-free milk
  • 1/2 cup liquid Irish cream coffee creamer

INSTRUCTIONS
Whisk together first 3 ingredients in a large saucepan until smooth. Bring to a boil over medium heat, whisking constantly; boil whisking constantly, 2 minutes. Remove mixture from heat; add Equal®. Cool slightly.Whisk in milk and creamer. Cover and chill at least 4 hours or up to 2 days.
Serve over ice. The Irish recipe makes 8 servings....enjoy it !

AMARETTO IRISH CREAM CHEESECAKE

INGREDIENTS
  • 1 1/2 cup vanilla wafer crumbs
  • 1/2 cup blanched whole almonds, roasted and finely chopped
  • 1/4 cup melted butter
  • 1 tablespoon Amaretto
  • 24 oz cream cheese
  • 1 cup sugar
  • 4 eggs
  • 1/3 cup whipping cream
  • 1/3 cup blanched whole almonds, toasted and ground
  • 1/4 cup Irish cream liqueur
  • 1-1/2 cup sour cream
  • 1 tablespoon sugar
  • 1/2 teaspoon vanilla extract

INSTRUCTIONS
Combine first four ingredients. Firmly press mixture evenly on bottom of lightly greased 10-inch springform pan.
Bake at 350°F for 10 minutes, then cool.
Beat softened cream cheese at high speed with an electric mixer until light and fluffy. Gradually add sugar, beating well. Add eggs, one at a time, beating after each addition. Stir in whipping cream and next 3 ingredients.
Pour into prepeared pan. Bake at 350°F for 50 minutes. Turn oven off and leave cheesecake in oven for 30 minutes with door slightly ajar.
Combine sour cream, 1 tablespoon sugar and 1/2 teaspoon vanilla extract. Mix well and spoon over cake.Sprinkle 1/4 cup almonds around the edge. Bake at 500°F for 5 minutes. Cool; chill. The Irish recipe of cheesecake is ready to serve...enjoy it !

BAILEY'S IRISH CREAM CHOCOLATE TRUFFLES

INGREDIENTS
  • 1/4 cup Bailey's Irish Cream
  • 12 oz semisweet chocolate chips
  • 1/4 c heavy cream
  • 1 T butter
  • 2 egg yolks

INSTRUCTIONS
Melt chocolate over very low heat. Stir in Bailey's and cream.
Beat egg yolks, stir a small amount of chocolate mixture into eggs, then slowly add the eggs to the chocolate mixture. Mixture will thicken. Add butter.
Refrigerate overnight, or several hours.
Using two large spoons or a small ice cream scoop, form small balls.Roll in powdered sugar, then cocoa. The brand of cocoa with chocolate bits works nicely. The Irish recipe of cream chocolate is ready to serve. Great ! Enjoy it !
